BLOOD II

OHMAHGAH.
Sooos.
Guess what?
I GOT TO DONATE BLOOD. Um, yeah. Be jealous.
I walked in...LONG LINE...and then got called thirty minutes later...and she pricked me and tested my hemaglobin. Recently, I have been on a protein BINGE what with iron rich cereals and iron pills and such, so to say the least, I was going to be very upset if I didn't get to donate. She came back and I WAS AT THE CUT OFF. Barely made it! But I made it, nonetheless.
So...there's a little update.
BTW.
DRAMA CLUB STATE TOMORROW.
We get to skip school. :D

BLOOD.

Donating Blood. A simple act, yet can save lives.
I recently tried to donate blood at my local Red cross on my birthday and took my parents with me. Instead of a successful donation, I was denied and slapped with a 24 hour suspension. : / My hemoglobin was too low. (Aka, IRON) Which most commonly comes from meat. Anybody else see this or have this problem themselves? Please comment with your stories! Anyway. I ended up being so disappointed that I ended up crying over it. It's so disheartening. I was then helped by every other nurse working that shift that gave me hugs...cookies and juice, and advice about how everyone is disappointed if they can't donate. Now. I can't donate yet because I want to donate at my school's drive. The lady who was helping my mom donate gave me some GREAT advice. I feel like it will work. A week before you plan to donate...eat SHREDDED WHEAT EVERY MORNING. It can be strawberry or whatever kinda frosted wheat you can find. (because it doesn't taste all that yummy without it and you'll be more likely to stick with it) AND A GLASS OF ORANGE JUICE. This helps the iron get absorbed better. (wow bad grammar)
So. To my fellow vegetarians....don't give up!! People need your blood!! And even if you've been put on a lifetime ban...you can still help out by ringing the bell, or thousands of other things for Red Cross!
I've rung the bell a few times and it is great! Just bring a friend and you get to annoy customers with a loud bell until they fork over their change. ;)

First days of school among other things.

So. How are you? I'm fine thanks. Hi. :)
So. Well, I'm not quite sure how to start this one. 
Erm. School. Ew. 
Yeah. GOSH. I'm having trouble blogging today.
So, second week of school and I already had an essay due, lots of homework, and three tests. Oh boy.
Golf is going well, I guess. Not really. Just kidding. I suck. 
*sigh* 
I'm going crazy. Seriously. Like, my mind is just being very mean. Very mean. Stupid mind. :P
Erm. Veggie news!!
Did you hear about Lady Gaga's meat dress that she wore to the MTVVMAS? Holy crap.
I understand and appreciate her message, but she could've used a costume material that looked like meat. 
(In the show, Lady Gaga reiterated her stand in wearing the meat dress at VMA 2010 saying, “It is a devastation to me that I know my fans who are gay … feel like they have governmental oppression on them. That’s actually why I wore the meat tonight.”) 
So yeah. That's apparently why she wore it. GOSH. She looks like a muscle mass. It's just so GROSS. Ew. Poor animals. Ugh.
But yeah. 
I don't have a structured recipe for y'all, but something I made the other day was just a simple pasta...
I took a box of pasta(any kind..), a jar of alfredo sauce, a box of those Smart chickin breasts (the fake kind, duh), and some fresh multi colored carrots from the farmers market.
I made up the faux breasts by just cookin em in a pan, easy peasy. Then I started on the pasta, cooked that then let it drain. After...I put some water in the pot and peeled and sliced the carrots and put them in the water to cook in boiling water. I just guestimated and cooked em until they were al dente. Then I combined the pasta, chicken breast(sliced), pasta sauce, and the carrots into the bowl and let it get nice & warm. :D 
YUM.

AUTUMN!!

I love autumn. It is my absolute favorite season EVER. And it's starting!! YAY. Leaves are on the ground and it's still warm enough to wear a tank top so you can feel the breeze. *sigh* It's wonderful. Autumn, which also means FOOTBALL! Yeah!! I love going to school football games! :) As we approach fall, I do think it's time for an Autumn Recipe! Finally, right? It's been a while since I posted one.
Autumn has some seasonal produce such as, the pumpkin(duh), Apples!, Corn, Squash and such! So I thought, why not make a recipe of all these! And as a vegetarian cook, I feel it is my time to actually make a recipe! Try some things out and see what the result is! Now, I'll post another recipe that I loved but I will definitely post my creation in a few days/weeks whenever I'm not busy. :)

VEGGIE PIZZA WITH HERBED TOMATO CRUST

  • 1/2 cup whole wheat flour
  • 1-1/2 teaspoons minced fresh parsley or 1/2 teaspoon dried parsley flakes
  • 1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
  • 1 teaspoon active dry yeast
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup water
  • 1/2 cup tomato juice
  • 1 teaspoon olive oil
  • 1-1/2 to 1-3/4 cups all-purpose flour

  • TOPPINGS:
  • 1 can (8 ounces) pizza sauce
  • 1 medium green pepper, chopped
  • 1 cup sliced fresh mushrooms
  • 1 small red onion, chopped
  • 1 medium tomato, chopped
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese

Directions

  • In a large bowl, combine the first seven ingredients. In a small saucepan, heat the water, tomato juice and oil to 120°-130°. Add to dry ingredients; beat until smooth. Stir in enough all-purpose flour to form a soft dough.
  • Turn onto a lightly floured surface; knead until smooth and elastic, about 5 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise until doubled, about 45 minutes.
  • Punch dough down; roll into a 12-in. circle. Transfer to a 14-in. pizza pan coated with cooking spray; build up edges slightly.
  • Spread with pizza sauce. Top with green pepper, mushrooms, onion, tomato and cheese. Bake at 400° for 25-30 minutes or until cheese is melted and edges are lightly browned. Yield: 6 slices

This goes very nicely with a tall glass of milk and it's low calorie!! How awesome! Great tasting and healthy!

Inception=LOVE

OH MY GOD. These men are genius. GENIUS!!! And by "these men", I do in fact mean the team of Hans Zimmer and Christopher Nolan. OH my jelly beans. This movie is the best frickin' thing I have ever seen. I cannot stop listening to the soundtrack. My earbuds are glued into my ears. Glued I tell you! Gosh. I love Leonardo and Joesph. It was pure heaven. I LOVED IT. You must see it. If you haven't you must. Now. Like seriously...get up off your chair and get in your car and see it. NOW! :) And then go purchase the soundtrack and listen to it until you fall asleep. 
Seriously though. This is the best movie I've seen in a long time, which equals ever. The plot it fantastic and it has a unique balance of action/mind games/love. Truly see it. It really makes me think....I wish I could do that.  You know, go into my mind and create. I know that's what dreaming is...but you aren't really aware that you're changing and creating things. I'd love to have the ability to do it on my own terms. So. Yeah. I have recipe...but I can't find it. So...this'll have to do. By the way...These men are amazing as well. Hot and sexy, smart men. ;D Gettin' their swag on. Mr. Dicaprio and Mr. Gordon-Levitt. OW OW!! <3
Speaking of dreams.... Does anybody know how to get people out of your dreams? I have this same person who is invading my dreams and has been for quite some time and I don't want this person there. It's practically driving me insane. Urgh. Any suggestions? And as always...

Singing in the Rain.

AH. I love Gene. Eugene Curran Kelly. Gorgeous person. Handsome everything. Gosh, this is the good part about being single. You can obsess about random celebrities and you don't have a boyfriend to get jealous over it. :) HEY HEY HEY. Readers. I have a de-lish recipe for you. I might have to post it later because as we speak, my mother is kinda mad at me. So....Later.
Guess what? I've taken up Ladies golf. I know..I know. Me with a large stick made of metal? Not good. SPEAKING OF. Did I tell you guys what happened one day when it was REALLY hot and sticky out? Well...I was driving some balls during lessons on the range and I bring my club down to hit my ball, miss, and chuck my club thirty feet in the air. No joke. It almost kinda not really hit someone. I was like, "Holy jesus." Hah. Anywho. So yeah. THEN my mother decides to make a spectacle of it. I mean, really mom? Nobody even saw it/knew about it until you shouted, "Oh! My daughter just let go of her club!" Thanks mom. I didn't even see it coming fast enough to shout FORE. Though I doubt that would've helped...WHOA. I just got really dizzy. I hate when that happens. I feel like I'm leaning sideways...but I'm not. Weird. Kinda like that Inception stuff. Well, I don't really know because I haven't seen it...but I'm going to take a wack at it and say it's about like, parallel reality or something like that. *sigh* I feel the need for another rampage, like in my last post, about the sun. This time...mosquitos.
MOSQUITOS
What is their purpose in this life, really? To make money for the OFF! companies, really! (HAH. I feel like Amy Poehler and Seth Meyers in that segment in SNL Daily update. XD "REALLY?!?") But seriously guys. To feed bats? And to make our lives miserable and make it humanly impossible to play golf this year!?
I HATE MOSQUITOS. I shot +7 on a par 4 today because of those bastards. I was violently swearing in my head, but was too polite to actually say it out loud. I know, *GASP* When would Katie swear!? It happens. Not often, but sometimes. Especially when it comes to those bloodsuckers. WHAT IS THEIR FRICKIN'  PROBLEM!?? They have to make evil babies. >:( OH. And then, they like, eat your blood and get so full that if you flick them you get a gush of blood. Ew. Try having to explain a giant smear of blood on your forehead to a room full of older women. Yeah. We could only muster up two and a half holes before we just plain quit. Ugh. Messing up my life they is...
And yes, I know I have curlers in my hair in my Profile pic. My friend too it, and she was like, "It's so retro." So, I stuck with it. :D I wanna look retro. I love retro. I wish I lived in the 40's when you could dress "swell" and go out with other dames and fellas in the town without having to worry about getting shot up on the block or being abducted. *sigh*
So, leave your thoughts about life, mosquitos, the amazing Gene, or protest the war, spread the love, whatever. I love feedback. And am desperate for it. SEE? I'm so desperate I'm putting it in my actual post. How pathetic. The Evils of the Sun

The sun is evil.
It's a big ball of evilness that wants to kill all the humans on the planet.
Why, you ask? Well...

1.     The sun makes it hot. Very hot.
2.     It emits radiation that causes sun burns and damage to our skin cells.
3.     The radiation causes cancer!
4.     Sometimes it decides to abandon us and it gets very cold.
5.     Sometimes it can give you VERY BAD BURNS. 2nd degree burns in fact from having fun at a water park and cause you agony for two weeks!!
6.     Sometimes this radiation it likes to give to the earth can react badly to your BCP and give you a rash somewhat similar to a sunburn, but itchy and ALL OVER!! 
7.     AND SOMETIMES IT DOES THIS WHEN YOU PUT SPF 70 ON ALL OVER AND YOU ONLY SPEND 45 MINUTES OUTSIDE!!!
8.     IT MAKES YOU SUFFER FOR LEISURELY MOWING YOUR LAWN!!!!
9.     AHHHHHHH!!!!!
I hate the sun. It's not nice. Argh.
So yeah. I have an irritating Rash from the Sun. All over. In addition to my terrible allergies that are plaguing my arms and legs. I believe summer hates me. I can't wait until school is over. Last week of school. Woohoo!  Finals are coming up soon though. I have a feeling I'll do fine. I did fine last semester so I'm not really that worried about it. But boy, because of this fun skin stuff, I didn't study. I'm going to study my arse off tomorrow night. Tuesday is...European History, French, Math. Yay. Then half day when I'm going to study for...STUDY HALL!! :D then Orchestra(nobrainer) and Science :)  So yeah. Gunna go rest up now. Goodnight,

FINALS

F.I.N.A.L.S.  Frick, I never actually learned (this) stuff. Is a more polite way of putting it. As we are ending the school year of 2009-10, I say fare thee well, and good luck to seniors! Finals. Finals. Gosh. The more I say it, the worst it gets. Why do teachers insist on putting us through these tests? How are we supposed to remember a formula we used four months ago, eh? And these reviews keep getting more and more confusing. What the heck are periods? And where do I find them on a Periodic table?! >.< As anxiety kicks in with all these projects(FINALLY DONE WITH ALL THREE) and these final review and the imminent tests, I sleep. I sleep a lot. Which is probably good in the long haul, but I'm not getting any work done when I go to sleep at seven thirty. Well, I usually just take a nap and sleep until 6 nowadays. Maybe me sleeping is partially due to the heat and the humidity. Then homework, unless I can procrastinate on it. If so, I usually just leave it 'till the morning. BAD HABIT, eh? Why do I always say "eh?" I'm not Canadian. Or are Ryan, Kelsey and their parents rubbing off on me? The world may never know. Along with Dinosaur emotions and the expanse of the Universe. OMG. Is anyone rather..miffed at our English teacher for making us learn Poetry three days before Finals? And even more upset that there is going to be a Poetry section on our English final!?? I swear our teachers are nuts. Toodle-oo. Going to beddy bye.

New Profile!

Ok. As you can see, I found a new profile. That old one was getting kinda of, boring. And, its spring. So I figured this one worked out well. I also fixed the bug in the blog about the whole posting comments thing, so you can post comments!! Which would gladly be appreciated! Because I love feedback!! HEYHEY! Guess what? I got a cactus! Its so cute! It's in a little cup. How adorable. :) I also got a little blue flower plant for my room. It looks like Styrofoam because it's a little sparkly-ish, but it's blue, and, well, yeah. But it's really quite beautiful! I shall welcome the new additions to my room wonderfully! So, if you come to my house and see blue flowers and a cute little cactus, that's why. Went flower shopping earlier with my mom and her crazy friend. Got pizza. Ate pizza, went home. Home...mom makes pizza. ?? She's more bonkers than I thought. Oh well. She kinda gave birth to me, so I should be nice. Thanks mom. THEN...was going to go to the set building at the high school, but, the circumstances were poor. So I didn't. Still have to find a nun's hat. Devon better have it for me tomorrow. That'd be bad if I didn't. I'm sure I will! I hope...anywho! Gunna go nibble on a piece of pizza. :) BYE!!

ACK!!

As my title correctly states, I'm in an ACK kinda mood. Using my email so I won't get in trouble in the library is a good thing, but again, I probably should be doing homework...just saying. But I feel the need to write. So, here I am! So, the defining ack moment: something that made me upset. Just, blargy blarg. I'm being a female, say my friends. Well, guy friends. I need a cheering up, per say. Well, I guess, ish. MEH!! I'm sure I'll feel better soon.


Well, this is interesting. Doing this by email, I do admit, it feels a little weird, but nevertheless, the same. I've been using lots of commas lately. Eh? I guess I'm a little happier now, I'm listening to my new favorite band's new single. :) SPEAKING OF SONGS!! My iTunes has been silly lately. It'll spend a few(ten) minutes syncing my iPod touch and then at the very end, it'll say "CANNOT SYNC IPOD TOUCH. UNKNOWN PROBLEM. ERROR(#)" Drives me nuts. So, I have new music from my new favorite band, but it hasn't synced to my iPod. >.< I have to restore my iPod every time I want to sync new songs on it. Which takes FOREVER!! And I don't have two hours to wait for it to do it's thing. I want my music now...haha. Usually I'm not this impatient...oh well. So right now, I'm listening to that band on my iPod using the Youtube application. Urgh, getting a headache from my gum. Does that happen to anyone else besides me? I'll chew on gum and then get a headache. I think its from the mint and the actual chewing motion, right? Because the jaw connects up there...or moves something up by my temple. Cuz thats where I always get 'em. Wow. I do believe I should stop chewing, right? Good idea. You know what is sad? Metro station broke up. :'( I loved them. And the drummer in this new favorite band of mine was the same drummer from Metro Station. Anthony Improgo. He's such a cutie patootie. But Mason was my favorite. ;) I used to have the BIGGEST crush on that dude. Even more than Johnny Depp! I know, how is that possible? It just is. :D

Does anyone notice how much we sit nowadays? Students sit for seven hours a day at school, probably two more at home, watching Tv/playing video games, etc. Then dinner, sitting, then something else outside(hopefully) then finally bed. We're such a lazy generation...Maybe that's what they'll call us in the future. Instead of the technology age, the lazy age. They kinda fit together, don't they? Because with more advances in technology, the more we sit around the computer, or driving in cars instead of biking and walking places. Lookie there, I spent up, half an hour doing this. Only one more hour of study hall. :/ Maybe I should do homework, but I consider study hall as a place where students can chill, kind of a break from regular classes. A much needed break, also, you know, if you wanna do homework, you can. Usually I do, but right now, I just need a release. A mental release, break, or a recharging, if you will. URGH. Stop it with the commas, will you brain? Haha. You guys don't mind THAT much, do you? I just think it's starting to bother me, just a teeny bit. Boy, my headache isn't getting any better, how annoying. Hey, you guys know how your music sounds so much better if you like push your earbuds down and into your ears? Like, not TOO hard, just a little push, and keep 'em there? Yeah, that rocks. Although most people think I'm like "goth" or something, because I'm like, plugging my ears. I'm just listening to my music the best way. :] Haha, why can't I write this much in this little time for my essays? XD It's probably because I love writing for you guys. :3 Well, perhaps it's a good idea if I do homework. So, I BID THEE FAREWELL!! :D

:D Absence of Food.

Well, hi again. You people. :) You rock by the way. For reading this? Oh, totally! Anywho. Still no comments! Sorry, I'm sounding needy. I'll stop. ANYANYWHO! So, y'all usually know this blog is about food, right? Weeheell, I have been so frickin' busy that there is absolutely no time to cook regular meals. We've been living on Veggie tacos, salad, Chinese, and pizza. Blech. I want some variety! But alas, there is no time! What with finals coming up and everything. So, I don't want ya to expect anything too big. I'll try to post a recipe from time to time. BTW. I got curious, and looked up Pot brownies. My response verbatim, "WHAT?! This is too crazy. Seriously? Ew. Who would...EW! That's so stupid. Stupid people throwing their lives away. Why would they post this on here!?!" Which brings me to something else. Who else thinks that alcohol should be illegal? I sure do. I'm pretty sure that, while I'm living, I'll never drink. I know, I know. "You're too young, you just wait and see," well, I think it's such a toxic drink made of poison, I pretty much think I'm gunna stick with that. So, ideas/thoughts on this? Comment!!

School.

Allo all my blog readers. Today, I received a pen pal letter from a girl named Mary Lou. She's french. S'pretty cool. Twas all in french and I totally shared it with my lunch table. I could tell how impressed they were(Not ;]) I believe they were thoroughly bored. Yep, I'm pretty sure they were. Anywho. AP Exams are happenin'. Not for me of course, but for the juniors and seniors. Poor things, already had ACT a month earlier, and now three and a half hours of testing two days in a row for some people? Craziness if I say so myself. TOO much testing! I don't think I'll like being a junior. What with all this testing and the JUNIOR PROJECT-ect-ect. (echo) That's scary if I do say so myself. Yeah. Well, comtemplating whether or not to take french next year. At the beginning of this year, I absolutely detested it. Like, UGH! It was really..meh. But now that I'm doing well in it the LAST MONTH OF SCHOOL, I feel as if I should like, you know, take it again for next year. I dropped it when we had the school counselors come in a get our schedules for next year. I also took choir instead. So now, I have a predicament. I have 8 credits now(the max) and I might want to take it. Idk. I don't think I can, because I have to take a class that puts my credits at the start at 6(health). So, I'm taking the following 1 credit classes: Orchestra and Choir. And the following 1/2 credit classes. Parenting and sports med. Meh. So I CAN HAZ PROBLEM! Why don't I take a poll, eh? Help me!! Well, erm. Hi! It has been a while, eh? I'm so sorry I haven't been on forEVER! I was super mega busy with the musical and shtuff and such. Haven't made din-din in a while. Dad made bean dip and egg rolls. Interesting combo, eh? Hah, I sound Canadian. No offense, er anything. I love Canadians! I have two good friends from the big CA. Actually, they're from NB, but you get the gist. Changing topics.
GEORGE GERSHWIN! The genius that is..Mr. Double g. Sorry, I be listenin' to him at the moment. Who can't like his pieces!? Seriously? I love him, and American in Paris, well. Loveliness. Gene Kelly made my heart sing in the movie also. Is it weird to have a super crush/obsession with a dead guy? Meh, like I care. I'm weird. :) I love life at the moment. Just gunna throw that out there. Is anyone else like, totally ready for the beaches and campfires? I know sure as heck I am. B. T. W. I can haz youtube channel nao? Parawhore160. Yeah, yeah. I know. What a stupid name right? Well, I decided that when I was a little, well, young. Hehe. Anywho, I know how I usually give you guys a recipe that totally rocks, so here goes.

C'EST VEGETARIAN PAELLA!
(It's vegetarian paella. Yum.)
Let's start with a valid starting point shall we? Ingredients!
  • 2 teaspoons olive oil
  • 8 ounces soy sausage, cut into 1-inch pieces (I love "smart" brand Italian sausages for this)
  • 2 cloves garlic minced
  • 1 cup marinated artichoke hearts, quartered
  • 1 cup sliced yellow squash
  • 1 cup baby squash or sliced zucchini
  • 1 cup sliced carrots
  • 1 bunch asparagus, ends trimmed, cut into 2 inch pieces
  • 1/2 cup frozen green peas
  • 14-ounce can diced tomatoes
  • 6 to 8 saffron threads
  • 1/2 teaspoon paprika
  • 2 bay leaves
  • 2 cups cooked rice
  • 1/2 cup reduced-sodium vegetable broth
  • 1/4 cup chopped fresh parsley leaves
  • Salt and freshly ground black pepper(or whatever)
SO! Get to it! Hah, you actually thought I wasn't going to post instructions? Silly readers. :)
Super simple!!
  1. Heat oil in large Paella pan or a skillet over medium-high heat.
  2. Add soy sausage and garlic. Cook 2 minutes.
  3. Add artichokes, squash, zucchini, carrots, asparagus, peas, tomatoes, saffron, paprika, and bay leaves, bring to a simmer and cook 5 minutes.
  4. Add rice and broth and cook for 5 minutes(yes again) until liquid is absorbed.
  5. remove from heat, remove bay leaves and stir in parsley. Season to taste with pepper and salt. SERVE!!
See? That wasn't hard. :)

BUSY

Ok. So. I'm super sorry I haven't had ANY time to even go on the computer or breathe. I'm the lighting board director for my high school's musical, "All Shook Up." So I"worked" at least seven + hours a day during my spring break(not much of a break, eh?) and I also "worked" fourteen hours yesterday. I had school today, and I spent seven hours learning, and seven hours pressing buttons and doing lights. IN CONCLUSION!! This is my Hell-week. I will not be on, and also, Imma be workin' from 8 'till ten thirty each night. And no, that's not eight at night, its eight in the morning. I'll be at school until 3-ish and, well, still at school but in my auditorium doing lights. How fun? NO! And I should be doing my paper, but I'm a procrastinator and I'm not even going to be there tomorrow. Well, for english at least. And I'm coming down with a cold. Ugh. Maybe I'll be sick enough to miss school, but well enough to go to practice? eh? Then I could finish my paper and then go!! How awesome? Maybe I'll just try to get sick. Of COURSE NOT! Well, yeah. So thats about it. I really should be getting to bed. So, Night!

RAIN!!


AHHH! Its raining for the first time this year!! YAY! I absolutely love the rain. Like, its my best friend. It smells so good! And it puts me in a fantastic mood. The kind of mood where you just wanna go outside and say, "Bring it on life! I can handle it!" You ever get that feeling? Yeah, you know you do. Say it! Say it!! There you go! :) Of course, its a bit chilly. But not really! Let's see, *checks temperature* *Gets frustrated because her computer isn't working* AH! Here it is. In little ol' Wisconsin, it is...50 degrees!! YAY! That is warm for us here in WI. Well anywho. I made dinner again tonight, although it wasn't my night. It was rather tasty though. Gosh, I'm really craving an egg right now. DANG! I might just have to go and make an egg quick. Eh, after this posteroonie. So. It was Chickpea & Sweet Potato Curry. We put it over rice and everything! We ran out of curry, so I supplemented cumin instead, and it was a little too cumin-y for me, but nonetheless, good. We also omitted the jalapeno Chiles because my mom can't handle spicy foods. I recommend it! Here it is.
  • 2 Tablespoons Canola Oil
  • 1 Small chopped yellow onion
  • 2 Cloves finely chopped garlic
  • 1 Tablespoon chopped fresh Garlic
  • 1 Seeded and finely chopped Thai or Jalapeno chile
  • 1 Tablespoon Curry powder
  • Salt and pepper-to taste
  • 1 Large Sweet Potato peeled and cut into 1/2-inch cubes
  • 1 Can (15 oz.) Chick Peas/Garbanzo beans drained and rinsed
  • I can (14 oz.) Coconut milk well shaken
  • 1/2 Cup FROZEN peas(put em in there frozen ;])
  • 1/3 Cup Canned diced tomatoes drained
  • Steamed basmati rice (for serving)
  1. Make the Curry Base
  • In a heavy bottomed saucepan over medium-low heat, warm the oil. Add the onion, garlic, ginger, and chile and cook, stirring occasionally, until the onion is translucent, about four minutes. Stir in the curry powder and cook, stirring constantly, until fragrant, about thirty seconds. Season to taste with salt and pepper.
  1. Cook the Vegetables
  • Add the sweet potato, chickpeas, the coconut mile, and 1cup water to the pan. Raise the heat to medium-high, bring just to a boil, reduce the heat, and simmer, uncovered, until the sweet potato is tender, about ten minutes. Add the peas and tomatoes and cook until heated through. Serve in bowls over steamed rice if desired.
There you have it folks!! So yeah. I'm assuming you know how to cook rice, so thats all good. By the way, most of the recipes I post are from the fabulous book, "Vegetarian" by Williams-Sonoma. :) I shall post another one tomorrow, not today, because I still want an egg. Haha. Quinoa Veggie Bean Burritos Enchilada Style

Ok. So I found this recipe on www.vegweb.com. I highly recommend this recipe!! I made if for my family a few weeks ago and it is so worth the work. It takes a while to prepare, but it is really delicious. Can I say how good it is one more time? Haha. ITS GOOD! So here you go you veggie cooks out there. I give credit to a Mr. Kmouse.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 large green or red bell pepper, chopped
  • 1 small zucchini, chopped
  • 2 cups baby spinach, roughly chopped
  • 1 teaspoon cumin
  • 1 teaspoon taco seasoning or chili powder
  • 1/2 teaspoon oregano
  • 1- 14oz. can diced tomatoes, drained and juice reserved
  • 1- 14oz. can black, kidney, or pinto beans, drained and rinsed
  • 2 cups water
  • 3/4 cup quinoa
  • 1 cup frozen corn (optional), thawed
  • 1- 8oz. can tomato sauce seasoned with 1/2 teaspoon each cumin and chipotle chili powder
  • 1/4 cup vegan mayo
  • squirt of ketchup
  • squirt of lime juice
  • 6 soft taco size flour tortillas

1) Preheat oven to 350 degrees Fahrenheit.

2) Heat olive oil in a medium sized pot and saute onion, bell pepper, zucchini and garlic until they are soft. Stir in the cumin, taco seasoning, and oregano and then add the drained tomatoes and spinach. Add the black beans, water and quinoa. Bring to a boil and then lower heat to medium low and cover. Simmer for 20 minutes or until quinoa is tender. Stir in thawed corn (if using). Season with salt and pepper.

3) To make the sauce, mix the tomato sauce and the reserved tomato juice in a bowl. Season with cumin and chipotle chili powder. Stir until combined.

4) Prepare drizzle by combining vegan mayo, ketchup and lime juice in another small bowl.

5) To prepare burritos, spread a little bit of sauce in the bottom of a baking dish. Fill a tortilla generously with the quinoa mixture. There will be a lot of filling so don't be afraid to fill them to bursting. Roll the tortilla closed and place seam side down in the baking dish. Proceed with the rest of the tortillas. Pour remaining sauce on top of all the burritos. Drizzle with vegan mayo/lime juice mixture. Bake uncovered for 20 minutes.



SO like I said. This recipe takes time, but it really is worth it. I used corn tortillas instead of flour, and they were really good. Authentic latin food! I give it five stars!! BTW. You will have TONS of filling left. I used it for chip dip. Kinda like a salsa thing. Its REALLY yummy. :)

Vegetarianism..

Softball! How I've missed thee so. Of course, my injuries do not. Don't sprain your ankle, and definitely don't fall down the stairs. Not fun. But alas, one must practice to achieve goals! I do believe I will be sore tomorrow though. Hm.. Not much happened today. Unless you want to hear about how my boyfriend bought me a bracelet and why my friends and I were laughing like hyenas during lunch. Yeah, you don't wanna hear about that. Well, what do you wanna hear about?! I could tell you about what I had for dinner, but I didn't actually make it tonight because of the whole softball thing, so it doesn't really count. It was delicious none-the-less. BY THE WAY. I am a vegetarian. (did I mention that already?) Have been for a while now, so everything I post on here is all veggie friendly. I cook from this really amazing cookbook. I really haven't had one bad thing from there. I will also be-a posting recipes for your viewing/cooking pleasure. I will make a separate post for the BEST ones, so keep a look out for that. I'll repost the recipe later, when I have time, and no headache. So, alas. I bid thee farewell fellow blogger/readers!

Fly me to the Moon

Well Hi again. As I was choosing a suitable profile layout for this wonderful blog of mine, I stumbled upon the one currently occupying said space and thought, "Wow! Isn't this beautiful?" I do oh-so love the stars and the moon. (FYI. I changed my layout. :) so its this new flower water cloud one) When I walk my dog, I often just look up at the moon and stare for a good half hour before freezing my buns off. I do live in Wisconsin you know, and it gets a mighty cold up here. Do you ever do that? I just find that space is so fascinating. I really do! I guess I chose the name of my 'blog' because it's quite ironic once you get to know me. I'm not really a typical teenager, give or take a few things, as you'll see once you get to know me better through my blogs. In fact, I do things many teenager's wouldn't. Such as, blog for instance. I also cook for my family as often as I can, keeping in mind my homework and extra curriculars. OH! Before I forget, I am a vegetarian for those of you who don't know me, and my parents, not so much. So whenever I cook, I usually make something veggie friendly. I think I'll use this blog to post some pictures of the food I make. Good idea? Wow. You can really tell I'm tired when my sarcasm is feigning. So, toodle-oo. Sleep well fellow bloggers!

Hello Y'all. This is officially my FIRST blog posting. Aren't you proud? Of course not. You don't know me! But, to me, this is the first step in becoming completely immersed in the phenomenon known as the Internet! What with Facebook, Twitter, Myspace, and several other sites in my internet history, I felt it was time to actually start doing something productive, instead of taking quizzes to see how good of a kisser I am, or how many kids I'll have. Now, you may see me as a complete stranger that has decided to post her daily doings on the internet, and you're absolutely right! I felt that my time could be salvaged somewhat on here, [plus, my parents think I'm doing homework] and I enjoy writing! So it's a win-win. And...You get to hear all about my life! How cool is that? Get's ya goin', doesn't it? Well, I do believe this concludes my introductory first post.
